Mediterranean Ground Beef Stir Fry
Ingredients:
1 tablespoon olive oil
1 red bell pepper, deseeded and diced
1 pint cherry tomatoes, sliced in half
8 ounces baby spinach (small tub)
4 garlic cloves, minced
2 green onions, thinly sliced (white and green parts separated)
1 pound ground beef
½ teaspoon dried oregano
Kosher salt and freshly ground black pepper, to taste
2 tablespoons crumbled feta cheese (optional)
Instructions:
Heat the Oil:
In a large skillet, heat the olive oil over medium heat.
Sauté Vegetables:
Add the diced red bell pepper and the white parts of the green onions to the skillet. Sauté for about 3-4 minutes until they start to soften.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Cook the Ground Beef:
Add the ground beef to the skillet. Break it apart with a spatula and cook until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
Add Tomatoes and Spinach:
Stir in the cherry tomatoes, dried oregano, and season with kosher salt and freshly ground black pepper. Cook for another 2-3 minutes until the tomatoes start to soften.
Add the baby spinach and cook until wilted, about 1-2 minutes.
Finish and Serve:
Remove from heat and sprinkle with the green parts of the green onions and crumbled feta cheese, if using.
Serve warm and enjoy this flavorful Mediterranean dish!
