🍣 Grilled Salmon Poke Bowl with Mango & Creamy Sauce 🥭

Ingredients:

For the Salmon:

2 salmon fillets (about 6 oz each)
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Mango Salsa:

1 mango, diced
1/4 red onion, finely chopped
2 tablespoons chopped cilantro
1 jalapeño, seeded and minced (optional)
Juice of 1 lime
Salt to taste
For the Creamy Sauce:

1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped parsley
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
Instructions:

Prepare the Salmon:
Preheat your grill to medium-high heat.
In a small bowl, mix together the olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Rub this mixture over the salmon fillets.
Grill the salmon for about 4-5 minutes on each side, or until cooked through and flaky. Remove from the grill and let it rest.
Make the Mango Salsa:
In a bowl, combine the diced mango, red onion, chopped cilantro, minced jalapeño (if using), lime juice, and salt. Mix gently and set aside.
Prepare the Creamy Sauce:
In a separate bowl, whisk together the mayonnaise, sour cream, chopped parsley, lemon juice, minced garlic, salt, and black pepper until smooth.
Assemble the Poke Bowl:
In a bowl, place a serving of cooked rice or quinoa as the base. Top with the grilled salmon, mango salsa, and drizzle with the creamy sauce.
