Chicken Cranberry Pinwheels

Ingredients:
2 cups cooked chicken breast, shredded or diced
1/2 cup cream cheese, softened
1/4 cup mayonnaise
1/4 cup dried cranberries, chopped (or fresh if in season)
2 tbsp honey or maple syrup
1 tbsp Dijon mustard
1 tsp lemon juice
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
4 large flour tortillas (whole wheat or spinach work too)
1/2 cup baby spinach (optional, for a fresh crunch)
1/2 cup shredded cheddar or mozzarella cheese (optional)
Instructions:
Prepare the filling:

In a bowl, combine the shredded chicken, cream cheese, mayonnaise, honey, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix well until smooth and creamy.
Stir in the chopped cranberries and spinach (if using), and add in the shredded cheese, if you want an extra cheesy touch!
Assemble the pinwheels:

Lay each tortilla flat on a clean surface.
Spread a generous amount of the chicken cranberry mixture evenly over the tortilla, leaving about 1 inch around the edges.
Starting from one edge, carefully roll up the tortilla tightly. Make sure it’s snug but not too tight to avoid squeezing out the filling.
Slice and serve:

Using a sharp knife, slice each rolled tortilla into 1-inch pinwheels.
Arrange the pinwheels on a serving platter, and they’re ready to serve!
