🌶️🥑 Spicy Meatball Bowl with Guac & Creamy Sauce 🍽️

Ingredients:
For the Meatballs:

1 lb ground beef
1/2 cup breadcrumbs
1/4 cup chopped onion
2 cloves garlic, minced
1 egg
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper (optional, for extra heat)
For the Guacamole:

1 ripe avocado
1/4 red onion, finely chopped
2 tablespoons chopped cilantro
1 jalapeño, seeded and minced (optional, for extra spice)
1 lime, juiced
Salt to taste
For the Creamy Sauce:

1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped parsley
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Bowl:

1 (15 oz) can corn, drained
1/4 cup chopped cilantro, for garnish
Instructions:
Make the Meatballs:
Preheat your oven to 400°F (200°C).
In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, salt, black pepper, chili powder, and cayenne pepper (if using). Mix until well combined.
Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, or until the meatballs are cooked through and browned.
Prepare the Guacamole:
In a medium bowl, mash the ripe avocado with a fork. Stir in the chopped red onion, cilantro, minced jalapeño (if using), lime juice, and salt to taste. Mix until well combined and set aside.
Make the Creamy Sauce:
In a small bowl, whisk together the mayonnaise, sour cream, chopped parsley, lemon juice, minced garlic, salt, and black pepper until smooth. Adjust seasoning to taste.
Assemble the Bowl:
In serving bowls, layer the baked meatballs, drained corn, and a generous scoop of guacamole. Drizzle the creamy sauce over the top.
Garnish with chopped cilantro for a fresh touch.
