Ingredients:

For the Steak:

1 lb steak (sirloin, flank, or your favorite cut)
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Grain Bowl:

1 cup cooked grains (quinoa, farro, brown rice, or your favorite)
1 cup roasted tomatoes, halved (cherry or grape tomatoes)
1 cup chopped kale or spinach
1/4 cup crumbled feta cheese (optional)
For the Creamy Dill Sauce:

1/2 cup Greek yogurt or sour cream
1/4 cup chopped fresh dill
2 tablespoons lemon juice
1 clove garlic, minced
Salt and pepper to taste
Instructions:

Prepare the Steak:
Preheat your grill or skillet over medium-high heat. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, salt, and black pepper. Rub this mixture all over the steak.
Grill or sear the steak for about 4-5 minutes per side, or until it reaches your desired level of doneness. Remove from heat and let it rest for a few minutes before slicing.
Make the Creamy Dill Sauce:
In a small bowl, combine the Greek yogurt (or sour cream), chopped dill, lemon juice, minced garlic, salt, and pepper. Mix well until smooth and creamy. Adjust seasoning to taste.
Assemble the Grain Bowls:
In serving bowls, layer the cooked grains as the base. Top with roasted tomatoes, chopped kale or spinach, and sliced steak. If desired, sprinkle with crumbled feta cheese.
Drizzle with Sauce:
Drizzle the creamy dill sauce over the top of the bowls.
