Harissa Chicken

Harissa Chicken
Spice up your dinner with this flavorful Harissa Chicken! Tender chicken thighs or breasts marinated in a zesty harissa sauce, perfect for a weeknight meal. Here’s how to make it:
Ingredients:
4-6 boneless chicken thighs or breasts (about 1-1.5 lbs)
1 yellow onion, sliced
2 tbsp harissa, divided
2 tbsp water
1 tbsp date syrup
1 tsp paprika
1 tsp cumin
1/2 tsp salt
1/2 tsp black pepper
Handful of parsley, chopped
Olive oil
For Serving:
Sumac onions (optional)
Instructions:
Marinate the Chicken:
In a bowl, mix 1 tablespoon of harissa, water, date syrup, paprika, cumin, salt, and black pepper. Add the chicken and coat well. Let it marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).
Cook the Onions:
In a large skillet, heat a drizzle of olive oil over medium heat. Add the sliced onion and sauté until softened and slightly caramelized, about 5-7 minutes. Remove the onions from the skillet and set aside.
Cook the Chicken:
In the same skillet, add a bit more olive oil if needed. Add the marinated chicken and cook over medium-high heat for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice sear.
Combine:
Once the chicken is cooked, return the sautéed onions to the skillet and add the remaining tablespoon of harissa. Toss everything together to combine and heat through.
Serve:
Garnish with chopped parsley and serve with sumac onions if desired. Enjoy your delicious Harissa Chicken!
