🍽️ Beef Lombardi Casserole 🍝

Ingredients:

1 tablespoon olive oil
1 pound lean ground beef
1/2 onion, finely chopped
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons tomato paste
3 cloves garlic, minced
1 teaspoon Italian seasoning
3 cans (10 ounces each) diced tomatoes with chilies, drained
1/4 teaspoon celery salt
1 package (12 ounces) egg noodles
1 1/4 cups sour cream
4 ounces cream cheese, softened
1 tablespoon cornstarch
2 1/2 cups Colby Jack cheese, shredded
Instructions:

Preheat the Oven:
Preheat your oven to 350°F (175°C).
Cook the Beef:
In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned. Drain any excess fat.
Add the chopped onion, salt, black pepper, tomato paste, minced garlic, Italian seasoning, diced tomatoes, and celery salt. Stir well and let simmer for about 10 minutes.
Cook the Egg Noodles:
While the beef mixture is simmering, cook the egg noodles according to package instructions. Drain and set aside.
Prepare the Cheese Mixture:
In a bowl, combine the sour cream, softened cream cheese, and cornstarch. Mix until smooth.
Combine Ingredients:
In a large mixing bowl, combine the cooked beef mixture, drained egg noodles, and the sour cream mixture. Stir until everything is well combined.
Assemble the Casserole:
Transfer the mixture to a greased 9x13 inch baking dish. Top with the shredded Colby Jack cheese.
Bake:
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
Serve:
