🌶️ Spicy Ginger Beef Stir Fry 🥢

Ingredients:

For the Stir Fry:

350 g (3/4 lb) sirloin steak, thinly sliced
5 tbsp vegetable oil
1 large chunk ginger, peeled and cut into thin matchsticks
½ tsp salt
½ tsp black pepper
1 medium onion, peeled and chopped
1 thumb-sized piece ginger, peeled and minced
3 cloves garlic, peeled and minced
1 large head of broccoli, cut into small florets
1 medium bunch spring onions/scallions, chopped
150 g (1 packed cup) mangetout (snow peas)
Two large handfuls fresh baby spinach
1 tsp chili flakes (adjust to taste)
For the Sauce:

5 tbsp soy sauce
2 tbsp oyster sauce
2 tbsp Chinese rice wine
3 tbsp soft brown sugar
2 tbsp cornflour/cornstarch mixed with 2 tbsp cold water
Instructions:

Prepare the Sauce:
In a bowl, mix together the soy sauce, oyster sauce, Chinese rice wine, soft brown sugar, and the cornflour/cornstarch mixture. Set aside.
Cook the Beef:
Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat. Add the sliced sirloin steak, season with salt and black pepper, and stir-fry for about 2-3 minutes until browned. Remove the beef from the pan and set aside.
Sauté Aromatics:
In the same pan, add the remaining vegetable oil. Add the matchstick ginger, chopped onion, minced ginger, and minced garlic. Stir-fry for about 2 minutes until fragrant.
Add Vegetables:
Add the broccoli florets, spring onions, and mangetout to the pan. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
Combine Everything:
Return the cooked beef to the pan. Pour the prepared sauce over the beef and vegetables. Add the baby spinach and chili flakes. Stir well to combine and cook for an additional 2-3 minutes until everything is heated through and the sauce has thickened.
Serve:
