Ingredients:
For the Beef:
1 lb beef sirloin, thinly sliced against the grain
2 tbsp cornstarch
1 tbsp soy sauce
1 tbsp Shaoxing rice wine (or dry sherry)
1 tsp sesame oil
1/2 tsp ground Sichuan peppercorns
1/4 tsp ground ginger
2 cloves garlic, minced
1 small onion, thinly sliced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
2 tbsp vegetable oil
For the Sauce:
1/4 cup soy sauce
2 tbsp rice vinegar
2 tbsp chili garlic sauce (adjust to your spice preference)
1 tbsp brown sugar
1 tbsp sesame oil
1 tsp cornstarch
1/2 cup beef broth
For the Garnish:
1/4 cup chopped green onions
Sesame seeds (optional)
Steamed rice, for serving
Instructions:
Marinate the Beef:
In a bowl, combine the sliced beef, cornstarch, soy sauce, Shaoxing rice wine, sesame oil, Sichuan peppercorns, ground ginger, and minced garlic. Mix well and let it marinate for about 15-20 minutes.
Prepare the Sauce:
In a separate bowl, whisk together the soy sauce, rice vinegar, chili garlic sauce, brown sugar, sesame oil, cornstarch, and beef broth. Set aside.
Cook the Beef:
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated beef in a single layer and cook for about 2-3 minutes until browned. Remove the beef from the skillet and set aside.
Stir-Fry the Vegetables:
In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onion, red bell pepper, and green bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
Combine and Sauce:
Return the cooked beef to the skillet with the vegetables. Pour the prepared sauce over the beef and vegetables. Stir well to combine and cook for an additional 2-3 minutes until the sauce thickens.
Serve:
Serve the spicy Szechuan beef over steamed rice. Garnish with chopped green onions and sesame seeds if desired.
