Ingredients:
For the Chicken:
2 boneless, skinless chicken breasts, cut into chunks
1 tbsp olive oil
1 tsp smoked paprika
½ tsp garlic powder
½ tsp salt & black pepper
½ tsp dried oregano
For the Salad:
4 cups chopped romaine or mixed greens
1 cup canned or marinated artichoke hearts, quartered
½ cup cherry tomatoes, halved
¼ cup red onion, diced
¼ cup shredded Parmesan cheese
For the Dressing:
2 tbsp balsamic vinegar
1 tbsp olive oil
1 tsp Dijon mustard
½ tsp dried basil
½ tsp honey
Salt & black pepper to taste
Instructions:
Cook the Chicken:
In a bowl, combine the chicken chunks with olive oil, smoked paprika, garlic powder, salt, black pepper, and dried oregano. Toss until the chicken is well coated.
