These Beef & Enoki Mushroom Rolls are a quick and delicious dish that’s perfect for a weeknight dinner or a special occasion. With just five ingredients, they’re easy to prepare and packed with flavor! Here’s how to make them:

Ingredients:
200g thinly sliced beef (hot pot slices or homemade)
100g enoki mushrooms, trimmed and cleaned
1 tbsp soy sauce
1 tbsp mirin
1 clove garlic, minced
Sesame seeds & spring onions (optional, for garnish)
Instructions:
Prepare the Beef:
Lay out the thinly sliced beef on a clean surface. If the slices are too large, you can cut them into smaller pieces that will easily wrap around the mushrooms.
Assemble the Rolls:
Take a small handful of enoki mushrooms and place them at one end of a slice of beef. Add a pinch of minced garlic on top.
Roll the beef around the enoki mushrooms tightly, securing them inside. Repeat this process until all the beef and mushrooms are used.
Cook the Rolls:
In a skillet or frying pan, heat a little oil over medium heat. Once hot, add the beef rolls seam-side down.
Cook for about 2-3 minutes on each side, or until the beef is cooked through and browned.
Add Flavor:
Once the rolls are cooked, drizzle the soy sauce and mirin over them in the pan. Allow them to cook for an additional minute, turning to coat the rolls in the sauce.
Serve:
Remove the rolls from the pan and place them on a serving plate. Garnish with sesame seeds and chopped spring onions if desired.
