Ingredients:
For the Sweet Potato Tots:
2 large sweet potatoes, peeled and quartered
1/2 cup all-purpose flour
1/4 cup cornstarch
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, lightly beaten
1/4 cup vegetable oil (for frying)
For the Marshmallow Cream Sauce:
1 cup heavy cream
1/2 cup mini marshmallows
1 tablespoon butter
1 teaspoon vanilla extract

Instructions:
Prepare the Sweet Potatoes:
Boil the quartered sweet potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
Once cooled, mash the sweet potatoes in a large bowl until smooth.
