These stuffed potato pancakes are a delicious and hearty dish that combines crispy potato pancakes with a savory beef and cheese filling. Perfect for a comforting meal! Here’s how to make them:

Ingredients:
Potato Pancake Mixture:

4 large potatoes, peeled and boiled
1 large egg
½ cup all-purpose flour
Salt and pepper, to taste
Stuffing:

1 lb ground beef
1 small onion, finely diced
1 tsp garlic powder
1 tsp paprika
1 cup shredded mozzarella or cheddar cheese
Salt and pepper, to taste
For Frying:

3–4 tbsp vegetable oil
Instructions:
Prepare the Potato Pancake Mixture:
Once the potatoes are boiled and cooled, mash them in a large bowl.
Add the egg, flour, salt, and pepper to the mashed potatoes. Mix until well combined and set aside.
Make the Stuffing:
In a skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onion is translucent.
Stir in the garlic powder, paprika, salt, and pepper. Remove from heat and let cool slightly.
Once cooled, mix in the shredded cheese until well combined.
Assemble the Pancakes:
Take a portion of the potato mixture (about 1/4 cup) and flatten it in your hand. Place a spoonful of the beef and cheese filling in the center, then fold the potato mixture over the filling to form a patty. Make sure the filling is completely enclosed.
Repeat with the remaining potato mixture and filling.
Fry the Pancakes:
In a large skillet, heat the vegetable oil over medium heat.
Once hot, carefully add the stuffed potato pancakes to the skillet. Fry for about 4-5 minutes on each side, or until golden brown and crispy.
Remove the pancakes from the skillet and drain on paper towels.
Serve:
Serve the stuffed potato pancakes warm, with your favorite dipping sauce or sour cream on the side.
