Ingredients:
For the Mango Base:

2 ripe mangos, peeled and pitted
2 ½ cups plain yogurt, divided
½ cup whole milk
4 ½ tablespoons honey, divided
¼ teaspoon salt
Pinch of cardamom
For the Cookie Coating:

3 cups roughly broken sugar cookies
2 (1 ½ ounce) bags freeze-dried mango
1 cup crispy rice cereal
Instructions:
Prepare the Mango Base:
In a blender, combine the ripe mangos, 1 ½ cups of plain yogurt, whole milk, 3 tablespoons of honey, salt, and cardamom. Blend until smooth and creamy.
Taste and adjust sweetness by adding more honey if desired.
Pour and Freeze:
Line a baking dish (about 9x9 inches) with parchment paper. Pour the mango mixture into the dish, spreading it evenly.
Freeze for about 4-6 hours, or until completely firm.
Make the Cookie Coating:
In a large bowl, combine the broken sugar cookies, freeze-dried mango, and crispy rice cereal. Mix well.
Coat the Bars:
Once the mango base is frozen, remove it from the dish and cut it into bars or squares.
In a shallow dish, drizzle the remaining 1 cup of plain yogurt and 1 ½ tablespoons of honey together to create a yogurt coating.
Dip each bar into the yogurt mixture, then roll it in the cookie coating until fully covered.
Final Freeze:
