This recipe is simplified for a quick summer fix, but still delivers that authentic, satisfying slurp. No need to be intimidated by complicated broths – we’re keeping it breezy.

Recipe: Easy Korean Cold Noodles (Naengmyeon)

Yields: 2 servings Prep Time: 15 minutes Cook Time: 5 minutes (noodles only) Total Time: 20 minutes (plus chilling time)

Ingredients:

  • Noodles:
    • 200g (7 oz) Naengmyeon Noodles (buckwheat or potato starch noodles – find these at your Asian grocery store)
  • Broth:
    • 4 cups Cold Water
    • 1 cup Beef Broth (store-bought is fine!)
    • 1/4 cup Rice Vinegar
    • 2 tablespoons Soy Sauce
    • 1 tablespoon Sugar
    • 1 tablespoon Gochujang (Korean chili paste – adjust to your spice level!)
    • 1 clove Garlic, minced
    • 1/2 teaspoon Ground Ginger
    • Pinch of Salt
    • Pinch of Black Pepper
  • Toppings (Customize these!)
    • 1/2 Cucumber, thinly sliced
    • 1/2 Korean Pear (or Asian Pear), thinly sliced (optional, but adds a great crisp sweetness)
    • 1 hard-boiled Egg, sliced in half
    • 2 tablespoons Kimchi, roughly chopped
    • 1 tablespoon Toasted Sesame Seeds
    • Ice cubes (for serving)
    • Yellow mustard or mustard oil (a must for a spicy kick!)

Instructions:

  1. Chill the Broth: In a large mixing bowl, whisk together the cold water, beef broth, rice vinegar, soy sauce, sugar, gochujang, minced garlic, ground ginger, salt, and pepper. Taste and adjust seasonings as needed. If it's not sweet enough, add a little more sugar. If it needs more of a tang, add more vinegar. Remember, it will taste a little stronger at room temperature than when chilled. Cover the bowl and refrigerate for at least 30 minutes, preferably longer (even overnight!) to allow the flavors to meld and get super cold. This is crucial for that refreshing naengmyeon experience!

  2. Cook the Noodles: Bring a large pot of water to a rolling boil. Add the naengmyeon noodles and cook according to package directions (usually 3-5 minutes). They should be cooked until al dente – slightly firm but not mushy. Overcooked noodles are a Naengmyeon sin!

  3. Rinse and Shock: Drain the noodles immediately and rinse them thoroughly under cold running water until they are completely cooled down. This stops the cooking process and removes excess starch, preventing them from sticking together. Gently massage the noodles with your hands while rinsing.

  4. Assemble the Bowls: Divide the chilled broth between two serving bowls. Add a generous amount of ice cubes to each bowl to keep the broth icy cold.

  5. Add the Noodles: Divide the rinsed noodles between the bowls, arranging them neatly on top of the broth.

  6. Garnish: Arrange the cucumber slices, pear slices (if using), hard-boiled egg, and kimchi on top of the noodles. Sprinkle with toasted sesame seeds.

  7. Serve: Serve immediately with a small bowl of yellow mustard or a drizzle of mustard oil on the side. Let everyone add their own level of fiery zing!

Chef's Tips & Variations:

  • Spice it Up: If you like it really spicy, add more gochujang to the broth. A tiny pinch of gochugaru (Korean chili flakes) on top also adds a nice touch.
  • Vegetarian/Vegan Naengmyeon: Substitute vegetable broth for the beef broth. Ensure your gochujang doesn’t contain any fish products. Consider adding some fried tofu as a protein source.
  • Extra Protein: Sliced cooked beef (bulgogi or thinly sliced steak) or pan-fried tofu can be added to the toppings for extra protein.
  • Sweetness Factor: Some people like to add a splash of sprite or a little bit of pear juice to the broth for extra sweetness. Adjust to your preference.
  • Make Ahead: You can prepare the broth and toppings ahead of time and store them separately in the refrigerator. Cook the noodles just before serving to prevent them from becoming mushy.
