Recipe: Bacon Jam Burgers

Ingredients:

  • For the Bacon Jam:

    • 1 pound thick-cut bacon, roughly chopped
    • 1 medium yellow onion, finely diced

    • 1/4 cup brown sugar, packed
    • 1/4 cup apple cider vinegar
    • 1/4 cup strong brewed coffee

    • 1 tablespoon Worcestershire sauce

    • 1 teaspoon onion powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For Assembly:

    • 4 brioche buns, toasted
    • 4 slices sharp cheddar cheese
    • Arugula or baby spinach
    • Dijon mustard (optional)

Instructions:

1. Crafting the Bacon Jam (The Star of the Show):

  • Reduce the heat to low and let the mixture simmer for about 20-25 minutes, stirring occasionally, until the mixture has thickened and caramelized to a jam-like consistency. Be patient! This is where the magic happens.
  • Return the cooked bacon to the pan and stir to combine. Taste and adjust seasonings as needed. Remove from heat and set aside to cool slightly.

2. Preparing the Burger Patties:

  • In a large mixing bowl, gently combine the ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Be careful not to overmix, or you'll end up with tough burgers.
  • Divide the mixture into 4 equal portions and form into patties. Use a burger press for uniform patties, or shape them by hand, making a slight indentation in the center of each patty to prevent them from puffing up during cooking.

3. Cooking the Burgers:

  • Preheat your grill or cast iron skillet to medium-high heat.
  • Cook the burger patties for about 4-5 minutes per side for medium doneness, or longer depending on your desired level of doneness.
  • In the last minute of cooking, top each patty with a slice of sharp cheddar cheese and allow it to melt.

4. Assembling the Masterpiece:

  • Spread a thin layer of Dijon mustard (optional) on the bottom bun.
  • Place a handful of arugula or baby spinach on the bottom bun.
  • Top with the cheese-covered burger patty.
  • Spoon a generous amount of bacon jam over the cheese.
