Crispy Pickled Kiwi and Radish Delight

Ingredients:
- 4 ripe kiwis, peeled and sliced
- 1 cup radishes, thinly sliced
- 1/2 cup apple cider vinegar
- 1/4 cup honey
- 1 tsp mustard seeds
- 1 tsp coriander seeds
- 1/2 tsp chili flakes
- 1 tsp salt
- 1 cup water
- 1 tbsp fresh dill, chopped
- 1/2 cup sliced red onion

Directions:
1. In a medium saucepan, combine apple cider vinegar, honey, water, salt, mustard seeds, coriander seeds, and chili flakes. Heat over medium heat until the honey dissolves and the mixture is warm.
2. In a jar or container, layer the sliced kiwis, radishes, and red onion.
3. Pour the warm pickling liquid over the layered fruits and vegetables, making sure everything is submerged.
4. Add chopped fresh dill on top of the mixture.
5. Seal the jar or container tightly and let it cool to room temperature.
6. Once cooled, refrigerate for at least 2 hours before serving, allowing the flavors to meld.
7. Serve chilled as a colorful, tangy snack or side dish.
