Beef and Macaroni Soup

Serves: 6 | Prep Time: 15 minutes | Cook Time: 30 minutes

Ingredients
1 lb (450g) ground beef
1 small onion, diced
2 cloves garlic, minced
2 medium carrots, chopped
2 stalks celery, chopped
1 green bell pepper, chopped (optional)
6 cups (1.5L) beef broth
1 (14 oz) can diced tomatoes, undrained
1 tsp Italian seasoning
1/2 tsp paprika
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
1 cup elbow macaroni
2 tbsp fresh parsley, chopped (for garnish)
Instructions
Cook the Beef:

In a large pot or Dutch oven, heat over medium-high heat.
Add the ground beef and cook until browned, breaking it apart with a spoon. Drain excess grease.
Add Vegetables:

Add diced onions, carrots, celery, and bell pepper. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
Stir in the minced garlic and cook for another 30 seconds until fragrant.
Simmer the Soup:

Pour in the beef broth and canned diced tomatoes (with their juices).
Add the Italian seasoning, paprika, salt, and black pepper. Stir well.
Bring the soup to a boil, then reduce the heat to low. Cover and let simmer for 15 minutes.
Cook the Macaroni:

Stir in the elbow macaroni and cook uncovered for 8-10 minutes, or until the pasta is tender. Stir occasionally to prevent sticking.
Garnish and Serve:

Taste and adjust seasoning if needed.
Ladle the soup into bowls, sprinkle with fresh parsley, and serve warm!
