🍗 Grilled Chicken Bowl with Creamy Sauce & Veggies 🥗

Ingredients:

For the Chicken:

2 boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
For the Creamy Sauce:

1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon chopped cilantro
1 tablespoon lemon juice
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
For the Bowl:

1 cup cooked rice
1/2 cup chopped bell peppers (any color)
1/2 cup cucumber, thinly sliced
1/4 cup chopped green onions
Instructions:

Prepare the Chicken:
In a bowl, combine the cubed chicken with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Mix well to coat the chicken evenly.
Grill the Chicken:
Preheat your grill or grill pan over medium-high heat. Grill the chicken for about 5-7 minutes, turning occasionally, until fully cooked and golden brown. Remove from heat and let it rest.
Make the Creamy Sauce:
In a small bowl, whisk together the mayonnaise, sour cream, chopped cilantro, lemon juice, minced garlic, salt, and black pepper until smooth. Adjust seasoning to taste.
Assemble the Bowl:
In serving bowls, layer the cooked rice, grilled chicken, chopped bell peppers, cucumber slices, and chopped green onions.
Drizzle with Creamy Sauce:
Drizzle the creamy sauce over the top of each bowl and enjoy!
