Spicy Cowboy Queso with a Twist

Ingredients:
- 1 cup sharp cheddar cheese, shredded
- 1 cup pepper jack cheese, shredded
- 1/2 cup crumbled feta cheese
- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup canned chipotle peppers in adobo sauce, chopped
- 1/2 cup roasted red peppers, chopped
- 1/2 cup coconut milk
- 1/2 cup cream cheese, softened
- 1 tbsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper (adjust to taste)
- 1/4 cup green onions, sliced
- Tortilla chips, for serving

Directions:
1. In a medium saucepan over low heat, combine the cream cheese and coconut milk. Stir until melted and smooth.
2. Add the shredded sharp cheddar and pepper jack cheese to the saucepan. Stir until all the cheese is melted and creamy.
3. Mix in the crumbled feta cheese, black beans, chipotle peppers, roasted red peppers, smoked paprika, cumin, garlic powder, and cayenne pepper. Stir well to combine all the flavors.
4. Cook for about 5-7 minutes, stirring frequently, until everything is heated through and well mixed.
5. Remove from heat and fold in the sliced green onions for a fresh touch.
6. Transfer the queso to a serving bowl and serve hot with tortilla chips for dipping.
