Lazy Girl Pecan Pie Bars
Ingredients:

For the Crust:

1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/2 tsp salt
1/2 cup unsalted butter, melted
For the Filling:

1 cup packed brown sugar
1/2 cup corn syrup (light or dark)
3 large eggs
1/4 cup unsalted butter, melted
1 1/2 cups pecan halves (or chopped if you prefer)
1 tsp vanilla extract
Pinch of salt
Instructions:
Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.
Make the Crust:

In a medium bowl, combine the flour, granulated sugar, and salt.
Add the melted butter and stir until the dough starts to come together. It will be slightly crumbly.
Press the mixture evenly into the bottom of the prepared pan to form a crust.
Bake the Crust:

Bake the crust in the preheated oven for 10-12 minutes, or until it’s lightly golden. Remove from the oven and set aside to cool slightly.
Make the Filling:

In a large bowl, whisk together the brown sugar, corn syrup, eggs, melted butter, vanilla extract, and a pinch of salt until smooth and well combined.
Stir in the pecans, mixing to evenly distribute them throughout the filling.
Assemble the Bars:

Pour the pecan filling evenly over the partially baked crust. Use a spatula to spread it out if necessary.
Bake the Bars:

Return the pan to the oven and bake for an additional 25-30 minutes, or until the filling is set and golden brown. It should be firm to the touch, but slightly jiggle in the center (it will firm up as it cools).
Let the bars cool completely in the pan before cutting them into squares.
Serve:

Once cooled, slice into bars and serve. These are perfect on their own or served with a dollop of whipped cream or a scoop of vanilla ice cream!
