Chocolate Pecan Turtle Clusters

Ingredients:

2 cups pecan halves (or halves and pieces)
1 cup caramel bits (or 14 oz caramel candies, unwrapped)
1-2 tbsp heavy cream (or milk)
12 oz milk chocolate (or dark chocolate, depending on your preference)
1 tsp vanilla extract (optional)

Toast the pecans:

Preheat your oven to 350°F (175°C). Spread the pecan halves evenly on a baking sheet and toast for 8-10 minutes, stirring once, until fragrant and lightly browned. Keep an eye on them, as they can burn quickly. Remove from the oven and set aside to cool.
Melt the caramel:

In a small saucepan, melt the caramel bits and heavy cream over medium-low heat. Stir frequently until smooth and melted. If you’re using unwrapped caramel candies, simply combine them with the cream and melt, stirring constantly. Once melted, remove from heat and stir in vanilla extract (if using) for extra flavor.
Melt the chocolate:

Melt the chocolate in a microwave-safe bowl. Microwave in 20-30 second intervals, stirring after each, until fully melted and smooth. You can also melt the chocolate in a double boiler on the stovetop.
Assemble the clusters:

Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
Take a small spoonful of the melted chocolate and drop it onto the parchment paper to form small puddles (about 1 1/2 inches wide). You should aim for about 12-15 clusters, depending on how large you want them.
Place 4-5 toasted pecans on top of each chocolate puddle, arranging them in a star or cluster shape.
Drizzle a spoonful of melted caramel over the pecans, letting it pool slightly on top of the nuts. Make sure the caramel is gooey but not too runny!
Top with more chocolate:

Drizzle the remaining melted chocolate over the caramel and pecans, making sure it covers the caramel and creates a smooth finish. You can also add a few extra chopped pecans on top for garnish if desired.
Chill to set:

Refrigerate the clusters for at least 30 minutes, or until the chocolate and caramel are fully set and firm.
Serve and enjoy:

Once set, remove the turtle clusters from the parchment paper and store in an airtight container. Enjoy these sweet, crunchy, chocolatey treats!
