Roasted Jalapeño Popper Grilled Cheese

Ingredients:
2 slices of your favorite bread (sourdough or white bread works great)
2 tbsp butter (softened)
1-2 fresh jalapeños (sliced in half and seeds removed)
4 oz cream cheese (softened)
1/4 cup shredded cheddar cheese (or your preferred cheese)
1/4 cup shredded mozzarella cheese
2 tbsp crumbled bacon (optional, but highly recommended for extra flavor!)
Salt & pepper, to taste
Instructions:
Roast the Jalapeños:

Preheat your oven’s broiler. Place the halved jalapeños on a baking sheet, cut side down. Broil for 5-7 minutes, or until the skins are blackened and charred. Remove from the oven and let them cool slightly.
Once cool enough to handle, peel off the skins (they should come off easily) and chop the roasted jalapeños into small pieces.
Make the Cream Cheese Filling:

In a small bowl, mix the softened cream cheese, shredded cheddar, shredded mozzarella, crumbled bacon (if using), and chopped roasted jalapeños. Add a pinch of salt and pepper to taste. Stir until well combined.
Prepare the Grilled Cheese:

Butter one side of each slice of bread.
Spread the jalapeño cream cheese mixture generously on the unbuttered side of one slice of bread. Place the other slice of bread on top, buttered side facing out.
Grill the Sandwich:

Heat a non-stick skillet or griddle over medium heat. Once hot, place the sandwich in the skillet. Grill for 3-4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
Serve & Enjoy:

Slice the sandwich in half and serve immediately. The inside will be creamy, spicy, and totally addictive!
