Homemade Sriracha Sauce

A spicy, tangy, and garlicky hot sauce that will elevate all your dishes!
Ingredients:
- 1 lb (450g) red chilies (Fresno, red jalapeños, or Thai chilies)
- 45 garlic cloves, peeled
- 1/4 cup white vinegar
- 2 tbsp sugar
- 1 tsp salt
- 1 cup water (adjust for desired consistency)
Directions:
1. Prepare the chilies: Remove the stems from the chilies. If you like it milder, take out some seeds.
2. Blend the base: In a blender, combine the chilies, garlic, sugar, salt, and water. Blend until smooth.
3. Cook the mixture: Pour the blended mixture into a saucepan and bring it to a gentle boil over medium heat.
4. Add the vinegar: Once boiling, stir in the vinegar, reduce the heat to low, and let it simmer for 5-10 minutes until it thickens slightly. Stir occasionally.
5. Strain (optional): If you want a smoother sauce, strain the mixture through a fine sieve or cheesecloth to remove any solids.
6. Cool and store: Allow the sauce to cool completely, then pour it into a sterilized bottle or jar.
7. Refrigerate: For the best flavor, let the sauce sit in the fridge for at least 24 hours before using.
