Ingredients:

1/3 cup (110g) honey
1 1/2 tsp hot sauce (I like Frank's or Cholula)
3/4 tsp chili flakes
2 x 250g (9oz) chicken breasts
2 tsp paprika
1 tsp salt
1/2 tsp each: onion powder, garlic powder, dried oregano, black pepper
1/4 tsp cayenne pepper
35g (1/4 cup) plain flour
2 eggs, beaten
65g (1 cup) panko breadcrumbs
Vegetable oil, as needed (6-8 tbsp)
200g (7oz) feta, crumbled
Instructions:

Prepare the Hot Honey Sauce:
In a small saucepan, combine the honey, hot sauce, and chili flakes. Heat over low heat until warmed through and well combined. Set aside.
Prepare the Chicken:
Preheat your oven to 200°C (400°F).
In a bowl, mix together the paprika, salt, onion powder, garlic powder, dried oregano, black pepper, and cayenne pepper.
Coat the Chicken:
Pat the chicken breasts dry and season both sides with the spice mixture.
Dredge each chicken breast in plain flour, shaking off the excess.
Dip into the beaten eggs, allowing any excess to drip off.
Finally, coat the chicken in panko breadcrumbs, pressing gently to adhere.
Cook the Chicken:
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. You may need to do this in batches to avoid overcrowding the pan.
Add Feta and Hot Honey:
Once the chicken is cooked, transfer it to a baking dish. Sprinkle the crumbled feta over the top of the chicken.
Drizzle the hot honey sauce over the chicken and feta.
Bake:
Place the baking dish in the preheated oven and bake for about 5-7 minutes, or until the feta is warmed and slightly melted.
Serve:
Serve the crispy hot honey feta chicken warm, drizzled with any remaining hot honey sauce. Enjoy this sweet and spicy dish!
