Korean BBQ Beef Bowl with Kimchi Mayo & Sesame Seeds
Ingredients:
For the Beef:
1 lb thinly sliced beef (flank steak, skirt steak, or ribeye)
1 tablespoon soy sauce
1 tablespoon gochujang (Korean chili paste)
1 teaspoon sesame oil
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 tablespoon sesame seeds
For the Kimchi Mayo:
1/4 cup mayonnaise
1 tablespoon gochujang
1 teaspoon rice vinegar
1/2 teaspoon sesame oil
1/4 teaspoon garlic powder
1/4 teaspoon red pepper flakes
For the Bowl:
1 cup cooked rice
1/2 cup kimchi, chopped
1/4 cup chopped green onions
Sesame seeds, for garnish
Instructions:
Marinate the Beef:
In a bowl, combine the thinly sliced beef with soy sauce, gochujang, sesame oil, garlic powder, black pepper, and sesame seeds. Mix well to coat the beef evenly. Let it marinate for at least 15-30 minutes.
Prepare the Kimchi Mayo:
In a small bowl, whisk together the mayonnaise, gochujang, rice vinegar, sesame oil, garlic powder, and red pepper flakes until smooth. Adjust seasoning to taste and set aside.
Cook the Beef:
Heat a skillet or grill over medium-high heat. Add the marinated beef and cook for about 3-5 minutes, stirring occasionally, until the beef is cooked through and slightly caramelized.
Assemble the Bowl:
In serving bowls, layer the cooked rice, topped with the cooked beef, chopped kimchi, and chopped green onions.
Drizzle with Kimchi Mayo:
Drizzle the kimchi mayo over the top and garnish with additional sesame seeds.
