Grilled Chicken Bowl with Corn, Jalapeños, and Creamy Sauce
Ingredients:
- 2 chicken breasts
- 1 cup corn kernels
- 2 jalapeños, sliced
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tablespoon lime juice
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Directions:
Step 1: Marinate the Chicken
Marinate the chicken breasts with olive oil, salt, and pepper. Let them sit for at least 30 minutes.
Step 2: Grill the Chicken
Grill the marinated chicken breasts until cooked through and grill marks appear, about 6-8 minutes per side. Let them rest for a few minutes before slicing.
Step 3: Prepare the Creamy Sauce
In a bowl, mix sour cream, mayonnaise, lime juice, salt, and pepper until well combined. Adjust seasoning to taste.
Step 4: Grill the Corn and Jalapeños
On the same grill, cook the corn kernels and jalapeño slices until slightly charred, about 5 minutes. Remove from heat.
Step 5: Assemble the Bowl
Slice the grilled chicken breasts and arrange them in a bowl. Add grilled corn and jalapeños. Drizzle with the creamy sauce and garnish with fresh cilantro.
