Grilled Lamb Chops with Roasted Butternut Squash & Creamy Dill Sauce
Ingredients:
- 4 lamb chops
- 1 small butternut squash, peeled and cubed
- 1/4 cup olive oil
- Salt and pepper to taste
- 1/2 cup Greek yogurt
- 2 tbsp fresh dill, chopped
- 1 clove garlic, minced
- 1 lemon, juiced
Directions:
Step 1: Prepare the Lamb Chops
Season the lamb chops with salt and pepper. Grill over medium-high heat for about 4-5 minutes per side, or until desired doneness is reached.
Step 2: Roast Butternut Squash
Toss the cubed butternut squash with olive oil, salt, and pepper. Roast in the oven at 400°F for 25-30 minutes until tender and slightly caramelized.
Step 3: Make Creamy Dill Sauce
In a bowl, mix Greek yogurt, chopped dill, minced garlic, lemon juice, salt, and pepper. Adjust seasoning to taste.
