🍍 No-Bake Pineapple Cream Dessert 🍰

Ingredients:

For the crust:

1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
For the filling:

1 can (20 oz) crushed pineapple, drained (reserve the juice)
8 oz cream cheese, softened
1 can (14 oz) sweetened condensed milk
1/2 cup heavy whipping cream
1 tsp vanilla extract
For the topping:

1 cup heavy whipping cream, whipped
1 tbsp powdered sugar
Shaved coconut or extra pineapple chunks for garnish (optional)
📝 Instructions:
Prepare the crust:

In a medium bowl, combine the graham cracker crumbs and sugar. Add the melted butter and mix until the crumbs are fully coated and the mixture sticks together.
Press the crumb mixture firmly into the bottom of a 9x9-inch (or similar sized) baking dish to form an even crust. Use the back of a spoon or your fingers to press it down tightly.
Place the crust in the refrigerator to chill while you prepare the filling.
Make the filling:

In a medium bowl, beat the cream cheese with an electric mixer until smooth and creamy. Add the sweetened condensed milk and vanilla extract, and mix until fully combined.
Stir in the drained crushed pineapple (you can reserve a small amount for garnish, if you like) and the pineapple juice that you drained off earlier. The pineapple juice helps create a creamy, smooth texture.
In a separate bowl, whip the heavy whipping cream until stiff peaks form (you can use an electric mixer for this). Gently fold the whipped cream into the pineapple mixture until everything is combined and smooth.
Assemble the dessert:

Spoon the pineapple cream filling over the chilled graham cracker crust, spreading it evenly with a spatula to cover the crust completely.
Smooth the top, and then return the dessert to the fridge to chill for at least 4 hours or overnight to set properly.
Prepare the topping:

Before serving, whip the 1 cup of heavy whipping cream with 1 tablespoon of powdered sugar until stiff peaks form.
Spread the whipped cream over the chilled pineapple filling to create a fluffy topping.
Garnish and serve:

Garnish with shaved coconut or additional pineapple chunks for extra flavor and decoration, if desired.
Slice and serve chilled!
