Spicy Grilled Steak Rice Bowl with Chipotle Yogurt Sauce 🌶️

Ingredients:
- 1 lb sirloin steak
- 1 cup cooked rice
- 1 red bell pepper, sliced
- 1 red onion, sliced
- 1 cup Greek yogurt
- 1-2 tbsp chipotle peppers in adobo sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish

Directions:

Step 1: Prepare the Chipotle Yogurt Sauce
In a blender, combine Greek yogurt, chipotle peppers, garlic, salt, and pepper. Blend until smooth. Adjust seasoning to taste. Chill in the refrigerator until serving.

Step 2: Marinate the Steak
Season the sirloin steak with salt, pepper, and a drizzle of olive oil. Allow it to marinate for at least 30 minutes.

Step 3: Grill the Steak
Preheat your grill to medium-high heat. Grill the steak for about 4-5 minutes per side for medium-rare, or longer based on your desired doneness. Let it rest before slicing.

Step 4: Sauté Vegetables
In a pan, sauté the red bell pepper and red onion with olive oil until caramelized and tender.

Step 5: Assemble the Rice Bowl
In serving bowls, layer cooked rice, sliced grilled steak, sautéed vegetables, and a generous drizzle of chipotle yogurt sauce. Garnish with fresh cilantro.
