BBQ Chicken & Potato Skillet 

🍗 BBQ Chicken & Potato Skillet 🥔

Ingredients:

2 chicken breasts
5 small/medium potatoes, diced
Olive oil
Salt, pepper, garlic powder, and paprika (for potatoes)
1/2 tsp each salt and pepper (for chicken)
1 tsp each paprika, ranch seasoning, and onion powder (for chicken)
2 tbsp butter
1 tbsp minced garlic
1/2 cup BBQ sauce
1 cup shredded mozzarella cheese
Instructions:

Prepare the Potatoes:
In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced potatoes and season with salt, pepper, garlic powder, and paprika. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are tender and golden brown. Remove from the skillet and set aside.
Cook the Chicken:
Season the chicken breasts with salt, pepper, paprika, ranch seasoning, and onion powder.
In the same skillet, add a bit more olive oil if needed and cook the chicken breasts over medium heat for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing.
Combine Ingredients:
In the skillet, melt the butter and add the minced garlic. Sauté for about 1 minute until fragrant.
Add the BBQ sauce to the skillet and stir to combine. Return the cooked potatoes to the skillet and toss to coat in the sauce.
Add Chicken and Cheese:
Slice the cooked chicken and place it on top of the potatoes in the skillet. Sprinkle the shredded mozzarella cheese over everything.
Cover the skillet and let it cook for an additional 2-3 minutes, or until the cheese is melted.
Serve:
