20-Minute Cilantro Lime Noodles
Ingredients:
8 oz noodles (spaghetti, rice noodles, or your choice)
1/4 cup fresh lime juice (about 2 limes)
1/4 cup olive oil
2 cloves garlic, minced
1/2 teaspoon red pepper flakes (optional, for heat)
1/2 cup fresh cilantro, chopped
Salt and pepper, to taste
Lime wedges (for serving)
Instructions:
Cook the Noodles:
Bring a pot of salted water to a boil. Add the noodles and cook according to package instructions until al dente. Drain and set aside.
Make the Sauce:
In a large bowl, whisk together the lime juice, olive oil, minced garlic, red pepper flakes (if using), salt, and pepper.
Combine:
Add the cooked noodles to the bowl with the sauce. Toss well to coat the noodles evenly.
Add Cilantro:
Gently fold in the chopped cilantro, mixing until well combined.
Serve:
Serve the noodles warm or at room temperature, garnished with lime wedges for an extra burst of flavor.
