Lemon Herb Chicken, Orzo, and Spinach Bowl with Creamy Feta Dressing 🍋🌿🍗

Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 cups fresh spinach
- 2 tbsp olive oil
- 1 lemon, juice and zest
- 1 tsp dried herbs (such as oregano, thyme, rosemary)
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- 1/4 cup Greek yogurt
- 2 tbsp mayonnaise
- 1 garlic clove, minced
- Fresh herbs for garnish (optional)

Directions:

Step 1: Marinate the Chicken
In a bowl, combine olive oil, lemon juice, lemon zest, dried herbs, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.

Step 2: Cook the Orzo
Cook the orzo pasta according to package instructions. Drain and set aside.

Step 3: Cook the Chicken
Heat a skillet over medium heat. Cook the marinated chicken breasts for about 6-7 minutes per side or until cooked through. Once done, let them rest for a few minutes before slicing.

Step 4: Make the Creamy Feta Dressing
In a small bowl, mix together crumbled feta cheese, Greek yogurt, mayonnaise, minced garlic, lemon zest, salt, and pepper until creamy.

Step 5: Assemble the Bowl
In serving bowls, divide the cooked orzo, fresh spinach, sliced lemon herb chicken, and drizzle with creamy feta dressing. Garnish with fresh herbs if desired.
