Asian Beef, Soba Noodle, and Crunchy Vegetable Salad with Peanut Lime Dressing
Ingredients:
- 1 lb flank steak, thinly sliced
- 8 oz soba noodles
- 2 cups shredded cabbage
- 1 red bell pepper, julienned
- 1 cup shredded carrots
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- Lime wedges, for serving
For Peanut Lime Dressing:
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 garlic clove, minced
- 1 tsp grated ginger
- 2 tbsp water
Directions:
Step 1: Marinate Beef
In a bowl, marinate the sliced flank steak with soy sauce, minced garlic, and grated ginger. Let it sit for at least 15 minutes.
Step 2: Cook Soba Noodles
Cook soba noodles according to package instructions. Drain and rinse with cold water. Set aside.
Step 3: Make Dressing
In a small bowl, whisk together peanut butter, soy sauce, lime juice, rice vinegar, honey, minced garlic, grated ginger, and water until smooth.
Step 4: Assemble Salad
In a large bowl, combine cooked soba noodles, shredded cabbage, julienned bell pepper, shredded carrots, and chopped cilantro. Toss well to mix.
Step 5: Cook Beef and Finish
Heat a skillet over high heat. Cook the marinated beef for a few minutes until nicely browned. Add the cooked beef to the salad. Drizzle with the peanut lime dressing, sprinkle chopped peanuts, and serve with lime wedges.
