Smoked Salmon Avocado Roll-Ups
Ingredients:
1 ripe avocado, peeled and sliced
8 oz smoked salmon (sliced into strips)
1 cucumber, thinly sliced
2 tbsp cream cheese or goat cheese (optional, for added creaminess)
1 tbsp fresh dill or chives, chopped (optional, for garnish)
1 tablespoon lemon juice (freshly squeezed)
8 large lettuce leaves (butter lettuce or romaine works best)
Salt and pepper, to taste
Instructions:
1. Prepare the Ingredients:
Slice the avocado into thin, even slices. Drizzle with a little lemon juice to prevent browning and enhance flavor.
If using, spread a thin layer of cream cheese or goat cheese on each lettuce leaf for added creaminess.
Slice the cucumber into thin strips or rounds, depending on your preference.
2. Assemble the Roll-Ups:
Lay out the lettuce leaves flat on a clean surface.
On each leaf, place a few slices of smoked salmon in the center.
Add a few slices of avocado and a few strips of cucumber on top of the salmon.
If you're using cream cheese or goat cheese, spread it on the inside of the lettuce leaf before adding the salmon and veggies.
3. Roll and Secure:
Gently roll the lettuce leaves around the filling, starting from one edge and rolling towards the other.
If necessary, secure the roll-up with a toothpick to hold it together, or simply tuck the end of the leaf under the roll.
4. Garnish and Serve:
Arrange the roll-ups on a platter and sprinkle with fresh dill or chives for added flavor.
Serve immediately with extra lemon wedges on the side for a fresh burst of flavor.
