Philly Cheese Steak Sloppy Joes

Ingredients:
1 lb ground beef (or ground turkey)
1 medium onion, finely chopped
1 bell pepper, finely chopped (green or red)
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
1 cup beef broth (or chicken broth for a lighter version)
1/4 cup ketchup
1/4 cup mayonnaise (optional, for extra creaminess)
4 hoagie rolls (or burger buns)
1 1/2 cups provolone cheese, shredded (or a mix of provolone and mozzarella)
Instructions:
Cook the beef and veggies:

In a large skillet, heat the olive oil over medium-high heat.
Add the ground beef, breaking it apart with a spoon, and cook until browned, about 5-7 minutes.
Once the beef is browned, add the chopped onion, bell pepper, and garlic. Cook for another 4-5 minutes, until the vegetables are soft and fragrant.
Season and simmer:

Stir in the Worcestershire sauce, soy sauce, paprika, salt, and pepper.
Add the beef broth and ketchup, mixing everything together. Bring the mixture to a simmer, and cook for 8-10 minutes, or until the sauce has thickened slightly.
Make it cheesy:

Stir in the mayonnaise (if using) for extra creaminess.
Sprinkle in 1 cup of shredded provolone cheese and stir until melted and incorporated into the beef mixture. You can add more cheese if you want it extra cheesy!
Prepare the rolls:

While the beef mixture is simmering, split the hoagie rolls and lightly toast them in the oven or on a griddle for extra texture (optional).
Assemble the sandwiches:

Spoon the cheesy beef mixture onto the bottom half of each toasted roll. Top with an additional sprinkle of shredded cheese and cover with the top half of the roll.
Serve:

Serve hot with your favorite sides—crispy fries, chips, or a simple salad.
