Blackened Salmon with Creamy Dijon Sauce

Ingredients:
For the Salmon:
4 (6-ounce) salmon fillets
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 lime, juiced
For the Creamy Dijon Sauce:
1/4 cup mayonnaise
1/4 cup Dijon mustard
1 tablespoon lemon juice
1 teaspoon honey
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions:
1. Prepare the Salmon:
In a small bowl, mix together the paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
Pat the salmon fillets dry with paper towels and rub the olive oil over each fillet. Then, sprinkle the spice mixture evenly over the salmon, pressing it gently to adhere.
Squeeze lime juice over the seasoned salmon fillets.
2. Cook the Salmon:
Heat a large skillet over medium-high heat. Once hot, add the salmon fillets skin-side down (if they have skin) and cook for about 4-5 minutes without moving them, until the skin is crispy and the salmon is cooked about halfway up the sides.
