Blackened Salmon with Creamy Dijon Sauce

Ingredients:

For the Salmon:
4 (6-ounce) salmon fillets
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 lime, juiced
For the Creamy Dijon Sauce:
1/4 cup mayonnaise
1/4 cup Dijon mustard
1 tablespoon lemon juice
1 teaspoon honey
1/2 teaspoon garlic powder
Salt and pepper to taste
Instructions:
1. Prepare the Salmon:
In a small bowl, mix together the paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
Pat the salmon fillets dry with paper towels and rub the olive oil over each fillet. Then, sprinkle the spice mixture evenly over the salmon, pressing it gently to adhere.
Squeeze lime juice over the seasoned salmon fillets.
2. Cook the Salmon:
Heat a large skillet over medium-high heat. Once hot, add the salmon fillets skin-side down (if they have skin) and cook for about 4-5 minutes without moving them, until the skin is crispy and the salmon is cooked about halfway up the sides.
Carefully flip the salmon fillets and cook for an additional 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
3. Make the Creamy Dijon Sauce:
In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, honey, garlic powder, and salt and pepper to taste until smooth and well combined.
4. Serve:
Plate the blackened salmon fillets and drizzle with the creamy Dijon sauce. You can also serve the sauce on the side for dipping.
Garnish with additional lime wedges or fresh herbs if desired.
