Cowboy Cookies 🍪
Ingredients:

1 cup unsalted butter, softened
3/4 cup brown sugar, packed
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 cups old-fashioned rolled oats
1 1/2 cups semisweet chocolate chips
1/2 cup shredded sweetened coconut
1/2 cup chopped pecans or walnuts (optional)
1/2 cup M&Ms or other candy pieces (optional, for a colorful touch)
📝 Instructions:
Preheat the oven:

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
Make the dough:

In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Combine the dry ingredients:

In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Add the mix-ins:

Stir in the rolled oats, chocolate chips, shredded coconut, nuts (if using), and M&Ms (if using), mixing until the dough is evenly distributed.
Scoop the dough:

Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon or your fingers.
Bake the cookies:

Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers are just set. The cookies will continue to firm up as they cool.
Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
