Easy Tortellini Alfredo with Chicken and Broccoli 

🍝 Easy Tortellini Alfredo with Chicken and Broccoli 🥦

Ingredients:

1 lb. cooked and cubed chicken
1 tsp. olive oil
2 tsp. minced garlic
1 1/2 cups low sodium chicken broth
1 1/2 cups half and half (fat-free works great!)
1/2 tsp. black pepper
1/2 tsp. salt
20 oz. tortellini (I recommend Rana refrigerated tortellini)
3 cups broccoli florets
8 oz. fat-free cream cheese, softened and cubed
1/2 cup grated parmesan cheese
Instructions:

Sauté the Garlic:
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add Chicken and Broth:
Stir in the cooked chicken and chicken broth. Bring to a simmer.
Incorporate Half and Half:
Slowly add the half and half, black pepper, and salt. Stir to combine.
Cook the Tortellini:
Add the tortellini to the skillet and cook according to package instructions, usually about 3-5 minutes.
Add Broccoli:
In the last 2 minutes of cooking, add the broccoli florets to the skillet.
Creamy Finish:
Once the tortellini and broccoli are cooked, reduce the heat to low. Stir in the softened cream cheese and grated parmesan cheese until melted and creamy.
Serve:
Serve warm and enjoy this comforting dish!
