Chili Roasted Turkey, Black Bean, and Avocado Salad with Chipotle Ranch Dressing
Ingredients:
- 1 lb turkey breast, sliced
- 1 can black beans, drained and rinsed
- 2 avocados, diced
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1/2 cup ranch dressing
- 1-2 tbsp chipotle peppers in adobo sauce, minced
- Salad greens of your choice
Directions:
Step 1: Chili Roasted Turkey
Preheat oven to 375°F (190°C). Season turkey slices with chili powder, cumin, salt, and pepper. Roast in the oven for 20-25 minutes until cooked through. Let it cool before slicing.
Step 2: Chipotle Ranch Dressing
In a small bowl, mix ranch dressing with minced chipotle peppers. Adjust the amount of chipotle to your desired spiciness level.
