Shrimp Fajita Quesadillas 

🍤 Shrimp Fajita Quesadillas 🌮

Ingredients:

1 lb shrimp, peeled and deveined
1 tablespoon olive oil
1 bell pepper (any color), sliced
1 small onion, sliced
2 teaspoons fajita seasoning (store-bought or homemade)
Salt and pepper, to taste
4 large flour tortillas
2 cups shredded cheese (cheddar, Monterey Jack, or your choice)
Fresh cilantro, chopped (for garnish)
Sour cream, salsa, or guacamole (for serving)
Instructions:

Cook the Shrimp and Vegetables:
In a large skillet, heat the olive oil over medium heat.
Add the sliced bell pepper and onion, cooking until they are softened, about 3-4 minutes.
Add the shrimp to the skillet, sprinkle with fajita seasoning, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat.
Assemble the Quesadillas:
Place a tortilla in a clean skillet over medium heat.
On one half of the tortilla, layer some of the shrimp and vegetable mixture, followed by a generous amount of shredded cheese. Fold the other half of the tortilla over to cover the filling.
Cook the Quesadillas:
Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
Serve:
Cut the quesadillas into wedges and garnish with fresh cilantro. Serve with sour cream, salsa, or guacamole on the side.
