Frozen Avocado Coconut Cream Pops

These delightful frozen treats are a creamy and refreshing way to beat the heat! With a unique twist of avocado and coconut, they are both nutritious and delicious.

Ingredients:
- 2 ripe avocados, peeled and pitted
- 1 cup coconut milk
- 1/2 cup plain Greek yogurt
- 2 tablespoons honey or maple syrup (optional)
- 1 teaspoon vanilla extract
- 1/4 cup shredded coconut (unsweetened)
- Pinch of sea salt

Directions:
1. In a blender, combine the avocados, coconut milk, Greek yogurt, honey (if using), vanilla extract, and sea salt. Blend until smooth and creamy.
2. Stir in the shredded coconut until evenly distributed.
3. Pour the mixture into popsicle molds or small cups.
4. Insert popsicle sticks or straws into each mold.
5. Freeze for at least 4 hours, or until completely solid.
6. To enjoy, run warm water over the outside of the molds for a few seconds to help release the pops.

Tips:
- For an extra tropical flavor, add a splash of lime juice to the mixture before blending.
- You can mix in some chopped dark chocolate or nuts for added texture.
- If you’re using small cups, consider covering them with foil and poking the stick through before freezing to keep them upright.
