Mediterranean Steak Bowl with Tzatziki Dressing
Ingredients:
- 1 lb flank steak
- 1 tsp dried oregano
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 1/4 cup crumbled feta cheese
- Fresh parsley for garnish
Tzatziki Dressing:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 2 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tbsp olive oil
- Salt and pepper to taste
Directions:
Step 1: Marinate the Steak
Season the flank steak with oregano, smoked paprika, salt, and pepper. Let it marinate for at least 30 minutes.
Step 2: Grill the Steak
Preheat a grill or grill pan over medium-high heat. Grill the steak for about 4-5 minutes per side for medium-rare. Let it rest before slicing.
Step 3: Prepare the Tzatziki Dressing
In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, and pepper. Stir well to combine.
Step 4: Assemble the Bowl
In a bowl, layer cherry tomatoes, cucumber, red onion, Kalamata olives, and sliced steak. Drizzle with tzatziki dressing and sprinkle feta cheese on top.
