Ginger Garlic Noodle Soup with Bok Choy (Bok Choy Soup)
Ingredients:
For the Soup:
1 tablespoon sesame oil (or vegetable oil)
4 cloves garlic, minced
2 tablespoons fresh ginger, grated
6 cups low-sodium vegetable or chicken broth
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar (or lemon juice for a tangy kick)
2 teaspoons sugar (optional, to balance the flavors)
4 cups baby bok choy, chopped (or regular bok choy, chopped)
4 ounces dried noodles (ramen, soba, or rice noodles work well)
1 tablespoon miso paste (optional, for extra depth of flavor)
1-2 teaspoons chili paste or sriracha (optional, for heat)
For Garnish (optional):
Sliced green onions (scallions)
Fresh cilantro or basil
Soft-boiled eggs (optional)
Chili flakes or sesame seeds
Instructions:
1. Prepare the Soup Base:
In a large pot, heat the sesame oil over medium heat.
Add the minced garlic and grated ginger. Sauté for about 1-2 minutes, or until fragrant, being careful not to burn the garlic.
2. Add Broth and Seasonings:
Pour in the vegetable or chicken broth, soy sauce, rice vinegar, and sugar (if using). Stir to combine and bring the soup to a simmer.
If you're using miso paste, add it now and stir to dissolve. Let the broth simmer for about 5 minutes to allow the flavors to meld.
3. Add Bok Choy:
Add the chopped bok choy to the pot and cook for 2-3 minutes, or until the bok choy is tender but still vibrant and slightly crunchy.
4. Cook the Noodles:
While the bok choy is cooking, bring a separate pot of water to a boil and cook the noodles according to the package instructions (usually 3-4 minutes for ramen, soba, or rice noodles). Drain and set aside.
Alternatively, you can add the uncooked noodles directly to the soup and cook them in the broth, adjusting the cooking time based on the type of noodles you’re using.
5. Assemble the Soup:
If you cooked the noodles separately, divide them between serving bowls. Ladle the hot broth with bok choy over the noodles.
If you cooked the noodles directly in the soup, simply serve the soup with the noodles already added.
6. Garnish and Serve:
Garnish your soup with sliced green onions, fresh cilantro or basil, and a soft-boiled egg if desired. For a spicy kick, add chili paste or sriracha, and sprinkle with sesame seeds or chili flakes.
Serve immediately and enjoy!
