Cider Donut Bread Pudding

Ingredients:

4-6 cider donuts (store-bought or homemade), cut into chunks
2 cups apple cider (fresh if possible!)
3/4 cup brown sugar
4 large eggs
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 cup milk or heavy cream (for extra richness)
Pinch of salt
2 tbsp butter (for greasing the baking dish)
For the topping (optional but delicious!):

1/4 cup cinnamon sugar (1/4 cup sugar + 1 tbsp cinnamon)
Instructions:

Preheat your oven to 350°F (175°C). Grease a 9x9 baking dish with butter.

Tear your cider donuts into chunks and place them in the prepared baking dish. If they’re a bit fresh or soft, that’s perfect!

In a large bowl, whisk together the apple cider, brown sugar, eggs, vanilla, cinnamon, nutmeg, milk (or cream), and a pinch of salt until well combined.

Pour the custard mixture over the donut pieces, making sure all the donuts are soaked in the liquid. Let it sit for about 10 minutes so the bread can absorb the custard.

If you’re adding a cinnamon sugar topping, sprinkle it evenly over the top of the pudding.

Bake for 40-45 minutes, or until the top is golden brown and the pudding has set in the center.

Let it cool slightly before serving. You can drizzle with a little extra apple cider syrup or enjoy as is!
