Caribbean Jerk Pork Bowl with Pineapple Salsa and Coconut Rice
Ingredients:
- 1 lb pork loin, sliced into strips
- 2 tbsp Caribbean jerk seasoning
- 1 cup jasmine rice
- 1 cup coconut milk
- 1 cup diced pineapple
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- Lime juice
- Salt and pepper to taste
- Olive oil
Directions:
Step 1: Marinate Pork
Coat pork strips with Caribbean jerk seasoning and let marinate for at least 30 minutes.
Step 2: Make Coconut Rice
In a saucepan, combine jasmine rice and coconut milk. Cook according to rice package instructions.
Step 3: Sear Pork
Heat olive oil in a skillet over medium-high heat. Sear marinated pork strips until cooked through, about 3-4 minutes per side.
Step 4: Prepare Pineapple Salsa
In a bowl, mix diced pineapple, red onion, cilantro, a splash of lime juice, salt, and pepper.
Step 5: Assemble Bowl
Divide coconut rice among serving bowls, top with jerk pork strips, and spoon pineapple salsa over the pork.
