Simple & Juicy Grilled Chicken with Rice & Fresh Salad

Ingredients:

For the Grilled Chicken:
- 2 boneless chicken breasts
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper

For the Rice:
- 1 cup white rice
- 2 cups water
- 1/4 tsp salt

For the Fresh Salad:
- 1 cucumber, diced
- 2 tomatoes, chopped
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper

Directions:
1. Cook the Rice: In a pot, bring 2 cups of water to a boil. Add 1 cup of rice and 1/4 tsp of salt. Reduce heat, cover, and simmer for 15 minutes until the rice is fluffy.
2. Prepare the Chicken: In a bowl, coat the 2 chicken breasts with 1 tbsp of olive oil. Season with 1/2 tsp of paprika, 1/2 tsp of garlic powder, 1/2 tsp of salt, and 1/2 tsp of black pepper.
3. Grill the Chicken: Heat a grill or pan over medium-high heat. Cook the chicken for 5-6 minutes on each side until it is golden brown and cooked through.
4. Make the Salad: In a bowl, combine the diced cucumber and chopped tomatoes. Drizzle with 1 tbsp of olive oil and sprinkle with 1/2 tsp of salt and 1/2 tsp of black pepper. Toss gently to combine.
5. Assemble & Serve: On plates, serve the fluffy rice, grilled chicken, and fresh salad. Enjoy your healthy and delicious meal!
