Taco Tortilla Roll-Ups

Ingredients:
4 large flour tortillas
8 oz cream cheese, softened
1/4 cup sour cream
1 packet taco seasoning mix (or homemade seasoning)
1 cup shredded cheddar cheese
1/2 cup salsa (drained, so it’s not too runny)
1/2 cup finely chopped green onions
1/2 cup diced bell pepper (optional)
1/2 cup chopped cooked chicken or ground beef (optional, for extra protein)
Fresh cilantro, chopped (optional)
Instructions:
Prepare the filling:

In a medium bowl, mix together the softened cream cheese, sour cream, and taco seasoning until smooth and creamy.
Stir in the shredded cheddar cheese, salsa, green onions, and bell pepper (if using). For extra protein, you can also add diced chicken or ground beef.
Assemble the roll-ups:

Lay each tortilla flat on a clean surface.
Spread a generous amount of the taco mixture evenly over the tortilla, covering the surface all the way to the edges.
Sprinkle a little chopped cilantro over the top for extra flavor (optional).
Roll and slice:

Starting from one edge, tightly roll up the tortilla, making sure the filling stays inside. Press gently as you go to keep it compact.
Once rolled, slice each tortilla into 1-inch pinwheels (you should get about 6-8 slices per tortilla).
Chill and serve:

If you have time, refrigerate the roll-ups for about 30 minutes to allow the flavors to meld and make them easier to slice.
Serve immediately, or store them in an airtight container in the fridge until ready to enjoy!
