Steaming Hot Dumplings with Spicy Brown Sauce

Ingredients:
For the Dumplings:
- 2 cups all-purpose flour
- 3/4 cup warm water
- 1 cup rice noodles, cooked and cut into small squares
- 1 tsp sesame oil
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 2 tbsp chili oil
- 1 tbsp brown sugar
- 2 garlic cloves, minced
- 1 tsp grated ginger
For Garnish:
- Red chilies, thinly sliced
- Green onions, chopped
Directions:
1. Prepare the Dough:
In a bowl, mix the flour and warm water together. Knead the mixture until you have a smooth dough. Cover it and let it rest for 30 minutes.
2. Wrap the Dumplings:
Roll out the rested dough into thin sheets and cut out small circles. Place a small amount of the cooked rice noodles in the center of each circle, then fold the dough over to form dumplings, sealing the edges tightly.
3. Cook the Dumplings:
Heat a pan and add the sesame oil. Lightly fry the dumplings until they are golden brown. Then, add 1/4 cup of water to the pan and cover it to steam the dumplings for about 5 minutes.
4. Make the Sauce:
In a separate bowl, combine the soy sauce, rice vinegar, chili oil, brown sugar, minced garlic, and grated ginger. Stir well to mix all the ingredients.
5. Serve:
Once the dumplings are cooked, place them in a serving bowl. Drizzle the spicy brown sauce over the dumplings and garnish with sliced red chilies and chopped green onions.
